Avocado Pesto Courgetti

I LOVE pesto. It's packed full of flavour and can make any dish more exciting. Plus, you can get experimental using different nuts or adding avocado to make it extra creamy.


  • Serves: 2
  • Ready In: 10 Minutes

  • 2 Courgettes
  • 1 Handful Cashew Nuts
  • 1 Handful Basil
  • 1 Handful Parmesan
  • Half an Avocado
  • 2 tbsp Olive Oil
  • 1 tbsp Lemon Juice
  • 6 Cherry Tomatoes
  • 125g Mozzarella


  • 1. Place cashew nuts, basil, Parmesan, avocado, lemon juice and olive oil in a blender and blend.
  • 2. Use a julienne or spiraliser to make courgetti.
  • 3. Heat courgetti in a pan on a medium to high heat for 3-4 minutes without any oil. Season with salt and pepper.
  • 4. Mix pesto in with the courgetti.
  • 5. Top with sliced tomatoes and torn mozzarella.
