15 Minute Vegan Creamy Cashew Soba Noodles


I love the nutty taste of soba noodles. They also have a surprisingly high protein content and are a good quality carbohydrate source - perfect for a training day.

  • 150g Soba Noodles
  • 2 Large Carrotts, grated
  • 100g Reg Cabbage, thinly sliced
  • 2 Spring Onions, very finely sliced
  • 1 Handful of Mint, finely chopped
  • 1 Handful of Roasted Cashews
  • 1 Handful of Coriander, finely chopped, plus extra to garnish
  • For The Dressing:
  • 2 Tbsp. Cashewnut Butter
  • 1 Tbsp. Fresh Ginger, peeled and grated
  • 1 Garlic Clove
  • 2 Tbsp. Lime Juice
  • 2 Tbsp. Rice Vinegar
  • 2 Tbsp. Dark Soy Sauce
  • Salt & Freshly Ground Black Pepper


  • 1. Cook the noodles according to the packet instructions, rinse with cold water and set aside.
  • 2. Meanwhile, whizz all the dressing ingredients together in a food processor.
  • 3. Mix everything together in a big bowl and serve, topped with fresh coriander.
